The name Le Cordon Bleu was first heard of in 1578. King Henry III of France established The Order of The Holy Spirit also known as Order of Knights of The Holy Spirit (L’Ordre des Chevaliers du Saint-Esprit). It was the senior chivalric order of France by precedence and existed for 250 years. Its membership was initially restricted to a small number of powerful princes and nobles. A gold cross hanging from a blue ribbon around their neck identified the knights of this order, also known and “Cordons Bleu”.
During their sumptuous meals, they set a high standard for fine dining therefore the expression “cordon bleu” became synonymous with culinary excellence.
